Hey don't that look FINE? There's fresh home made bread, and not with a bread machine either. Oh man it was good. Okay well it still is.

I'm really happy with this week's bread bake. The loaves are so light and fluffy -- you don't usually get that with whole wheat bread.

What's my secret? Knead the beejeezus out the dough!

I recommend using a heavy-duty mixer with a dough hook. If you don't have a mixer, feel free to release your life's frustrations (whatever they may be) into the dough with your hands. Pound it, punch it, strangle it, or even slap it again the counter -- it's all perfectly legal. Just show that doughs who's in charge and you too will get light and fluffy bread.

Does that whip the gluten into submission?

Yup, its the only way to get a rise out of it.
