Egads, FINALLY. They're baaack. Of course I can't wait for Saturday morning now, but I have to say I'm not nearly as anticipatory as I thought. We've been eating pretty well at the ol' Lab this last few weeks, so my skip to the meat stall won't be quite as skippy. I think this time I'll only be getting a pint of the Sugo Di Carne, some Finnochiona (YUM central) and some Pancetta Toscana. Hey, my interest is picking up a bit. Oh, yeah. Remember when we said that Butcher Taylor and his wife Toponia were going on vacation? (yes, we know, you remember, and you?ve been pining ever since). Well, the time to rejoice is here, because they?re back, baby, and they?re better than ever. Refreshment has taken place. Relaxing has taken place. Regrouping has taken place. Pancetta Toscana has taken place. Hot Links have taken place. Hasn?t your pasta sauce seemed a little, well, dull lately? Haven?t you wanted something porky, salty, and fennel-y to saute in that evoo before you add those San Marzanos? Uh, huh, Pancetta Toscana, chunks of fully cured pork belly, is what your sauce longs for, we have a feeling. And your grill, hasn?t your grill been feeling a little lonely? Looking a little clean? Why don?t you get all down and dirty with some smoky, spicy hot links? Also, not to worry if it?s your old favorites you?ve been missing, t hey?re all here, too. Crepinettes, pates, rillettes. See, all T & T needed was a little R & R (ha), and here they are again, spicing up your sauce, hotting up your links-- ahh, life is juicy again.
